Baker no more.

Well, I quit my job. The new head chef, insists everyone call him Chef even though he dosen't cook, decided that he only wants people with degrees in his kitchen. I was told to get out about a month ago, but **** him, I wasn't gonna go anywhere right? Well, as usual I was wrong. I am proud of myself though, I was the last one there without a degree. Over half the staff quit and most of the new people quit.

Why?

I came back from my last two days off only to be written up for two "no call, no shows". Imagine the look on my face. How ****ed would you be? Then the next week I was written up for taking an order from a customer and making that order. Something I've done countless times. They got charged the usual amount and everything so I cant figure out the problem. I wasn't allowed to put any comments on the writeup, so it looks like on paper like I'm admitting to it. **** him. Where does he get off? I came in my last day off, which was payday, to get my check and was told that I'd be written up for calling in and not telling a supervisor! WTF!? Anyway, lots of other stuff. He two days before I left he came up and asked for a special cake an hour before it was due. No prob, I got it done, from scratch, in an hour. I think it surprised him, I don't think he actually thought I could do a puzzle cake in an hour. He and two of his friends (who don't work there) ate the whole thing, lol.

The owner is ****ed, and even e-mailed me. He didn't ask me to come back, my resignation letter told him I wouldn't till the new head chef is gone. Lots of customers are gonna be ****ed also. I was in charge of all the baked items for Bunkers Sports Bar and the Cafe. I'm the only one with the master recipes. Don't get me wrong, I'm sure they can do without me, and it won't take them long to find out how to make everything, but lol, we've got some picky ass customers. Just a small change can **** them off.

The lady in personnel said she'd try to give me all my PTO on my last check, but I don't think there gonna let her give me an extra $1k. She said there was nothing she could do about chef, he's over her. (again, WTF?)

All well. I'm just glad I saw it coming. I've paid up the bills for the next few months and I'm gonna take a month off to work on the chain maille and get this blood pressure thing taken care of (by hiking, MTB, and fishing - hopefully all in the same day). I'll probably check with the last head chef, she's really cool, and the one that hired me in the first place. Or I may take a break from the kitchen for awhile, I've got six years of management experience so I'll see whats out there. It sucks that I had to leave, and I'm sure he's gonna get his in the end.

Soo....anyway, how's everybody been?

LOL, that was quick. I thought it would be at least 10 min before the impersonators came around.

The puzzle cake, I don't have a picture of it and I cant find a pic on google. But it's just white and choc sponge cake, cut very thin, layered, and before you ice the outside you cut out a cone in the middle ( [\/] )and take it out, add a few more layers of white and choc over the whole thing, then put the cone back. Looks kinda cool I guess. Whatever...

I don't believe for a minute someone was waiting around here for you to post so they could reply right away. I think you had to have done all of the posting. You are a real fruit loop, you know.

I bet there is a lot you aren't telling us and you probably deserve to be fired. You probably lied and ate most of the food and creeped too many people out so they figured you had to go or they would get fined for health code violations. I think you are lying about your cake. I don't think you can bake a cake from scratch, have it cool down properly, and frost it all fancy like in under an hour. I figure you are one of those big guys that have to take a dump every 40 minutes so that is going to leave you with less time. I just hope you washed your hands.

Actually, other than the degree I still cant find out the problem. Your right, I'm not telling the whole thing, the first post was long enough and I didn't want to go all the way back to June. Every time someone came in the kitchen with a clip board I was the one making sure the rags were under the counter or in a sanitizer bucket. Chef did get ****ed that I went through so many gloves. He said flour, sugar, and milk products were going to triple in the next few months, maybe thats it? Hell, who knows.

Well, lots more to say, but nobody really gives a ****. I'm going fishing, latters.

Sorry dude but your story has more holes than a colander. And what is with you saying there is a lot of traffic here? This place is always slow. That is why I think you made the posts you say weren't you. The times are 2 minutes apart. I don't think it is even possible for someone to load the page at the exact time you submitted it, read it, and reply in two minutes. And then how many people would even know what ganache is? You spelled it wrong BTW.

Chefs do not demand degrees, especially from bottom of the totem pole people. They demand people that can cook.

Anyway, back to the problems with your story. First, if the new chef is a chef then it would be expected for everyone to refer to him as such, even if he doesn't actually cook there. You said you went to school to be a chef so you should know this.

I don't believe you were written up for not coming in on your day off. If you were off it would be on the written schedule. More likely you decided to spend the days playing D & D instead of burning food and you got busted. If you were being written up for things that were not true you do not have to sign the write up. Employers know very well that they can get sued for wrongful termination so it is very unlikely you were written up for anything that you didn't deserve.

I don't believe lots of customers are going to be ****ed. I believe they are going to feel more comfortable eating their scones knowing you did not touch them.

I don't believe the chef and his two friends sat down and ate a full sized cake by themselves unless they are all as big as you.

Flour, sugar, eggs, and milk are not going to triple in price over the next few months. That would make milk over $12 a gallon. You must think we are idiots to try to pass that one off.

There is no way you are the only one with the master recipes. You aren't the sous chef. You are more like the assistant to the assistant to the assistant to the assistant to the sous chef. And why to they need to write down the recipes? Anyone with a degree (as you claim is needed) would know how to make any of the deserts without any real trouble.

So either you are making up a lot of lies for some sympathy or you are like this person at work that I know is going to get fired. They suck at everything they do. They are terrible with the clients. They are late every day. They call in sick almost every Monday. They break almost every procedural rule there is. This person should have been fired a long time ago. And the kicker is... you know what they talk about ALL the time? they talk about how great they are at their job and how they deserve a raise and promotion.

You big tubby fruitcake, you need to keep your BS stories simpler so they aren't so obviously untrue.

He does demand degrees from his people. It doesn't seem to matter whether they can cook or not, I truly believe this is to make him look good. Didn't I ask a WTF? on this or was that just on the pastry chef forum...?

We've always had more than one chef in the kitchen, after a degree or sufficient experience you are called such out of respect. You include the first or last name so that 20 people don't turn when you say "chef". For some reason this infuriates him. To quote him "I am not Chef Jim, I am not Chef Anderson, I am Chef. None of your are a Chef while I am in this kitchen, you are just my cooks" Also, calling another chef out as "just a cook" is probably some kind of disrespect. I've only been called chef a few times, and I quickly let them know "I'm just a baker, thats all I do really"

I asked a WTF on the day off thing as well didn't I? Mine was just shorter and didn't go back to a game I played years ago.

Obviously you've never worked at a resort. My customers wanted every ****ing thing the exact same. To the point of some of my recipes had to be slightly altered on hot, humid, or colder days. They were that picky. I probably would be to if I were paying that much to stay out there.

I still wish I could find a pic to show you people. It's not a big cake. It's a 9" round but it's not as tall as what your probably thinking. Hell, I'll probably just make another anyway to add to my recipes and resume book. I'll post a picture whenever I get around to making it.

No, I'm not the sous chef, no where near that. I'm just a pastry chef. Barely one at that. In most kitchens I'd just be the assistant, but were a fairly small kitchen and there are just three of us bakers. There are 4-6 food outlets where I worked, depending on the season and how many people we had in house. I just did two of them. (haven't I already said half this ****?) I had the recipes for both of them. Like I said, I'm sure there gonna figure it out, and probably already have. Take the brownies for example. A brownie is just a brownie right? LOL, look up on google and see how many different recipes you get.

Ask any real baker or pastry chef. We do things a little different than the rest of the kitchen. Everything is weighed or measured before adding it. Some bakers get mad at this, but for some things it doesn't matter. I don't measure out the egg or cream anymore when I'm making vanilla sauce, or creme brulee, but I'm anal about measuring leavenings or spices down to the .00 ounce.

Sympathy on OT? ROFL!! I come here to vent because nobody cares (well, thanks for proving that with all this ****) Someone came here I knew a long ass time ago and asked me about a dead girlfriend instead of just e-mailing me, and there's still fake posts going on about it. I finally explained and then some jack hole came on here and made up all kinds of ****, how she's not really dead (how I wish it were true) and how she was just running, getting people on here who actually know me in real life ****ed at ME! There is no sympathy on boards like this, ok?

I didn't want a promotion, that would have put me at head pastry chef, and it will take me years to get to that level. I'm good, but not any****ingwhere near that good. I missed three days since I started there back in June. Granted thats the most I've ever missed in any job I've ever worked, but two of those days I called the day before I was scheduled from the ER. The other was cause I had nothing on my production list and it was a pretty day. I didn't feel like standing around for 8 hours. You've never called in on a pretty day when you had **** to do and nothing to do at work? I did once. Worried about my job the whole time and never did it again.

Hey, if I ever post something simple it's probably just another impersonator. The whole venting thing doesn't really lend its self to short posts.

Well, I'm gonna go work on the car. I've got to sell it to get another. It sucks, I love that car, but by the time I put $1600 in a trans on a 20 year old car I could use that money on a down payment on something thats a little easier to find parts for. Maybe a 08 Taurus. It's not like I can afford anything fancy.

Speaking of BS, didn't you just say you quit your job? Didn't it pay like $18K or something low like that? Now maybe I am missing something but in order for you to buy an 08 Taurus you would have to get a loan. In order to qualify for a loan, you would have to have a job. I think there are a few pieces missing from this puzzle cake.

LOL, I didn't think of that. I guess I'd better wait till next week then. (sometimes the blondness takes over) Last time I went I could get a 07 Taurus for 2k down and $179 a month, a 08 cant be much more that that. I can afford about $250-$300. I've said this a few times, but my rent and other bills is fairly low. With rent, bills, student loans, food and utilities I'm still under $500 a month. I get more back on my taxes also with the small chain maille thing and the receipts from things Glade wouldn't reimburse me for, not to mention donations and a few other things I can take credit for.

It's been awhile since I've been a Barista. I'm not sure where my certificate is though...I'll have to find that thing...may come in handy again. Anyway, I didn't actually work for Starbucks. I worked for HMSHost, which had bought lots of Starbucks stores as franchises. We still had to keep up with Starbucks standards, and we had the same products, but we didn't get any of the benefits. We got our check every week and that was it. I did sneak free coffee whenever I opened though. I miss my 10 shots over ice every morning...probably one of the reasons I've got heart problems though, you know, along with the whole fat ass thing.

I"m gonna probably be offline for the next few days. I'm reworking my room. LOL, it's gonna take me till 3am just to get the books of my bed. I've been collecting crap for years and I've finally gotten around to organizing everything. I just wish I had it in me to toss some of this stuff, I mean, when am I ever going to use this old Atari, or this old set of records? (I wonder how much this original Wizard of Oz LP still in the original wrap is worth?) And how in the hell did I get a Pena Dragon? I cant afford that...I cant even find the one I have online... Or this rat skeleton under my entertainment center? I had ****ing rats in my room?! Ewww.... I've also found all kinds of prescription drugs in my desk. I know what the Darvocets are but I wonder when I ever took anaprox or flexeril? I freaked out when I found the fentanyl patches, that must have been left oven when I had cancer or something. I got rid if that thing right away. I'll just have to flush them down the...wait, wasn't there something on tv the other day about no doing that? ****, I'm not gonna leave all this stuff in the trash, with my luck someone will get into it and I'll get sued or something. Man, if I knew I wouldn't get caught I'd sell this ****. But I'm a pussy, so you know what they'd do to me in prison? Maybe I should keep one of those patches as a reward for getting all this work done...na, I'll just get rid of them all now. I should be able to flush the patches to...there not that big... LOL, I'm I boring you people yet? Gotta go.

I have to admit that most of my last post is a lie. But anyone that has been here for a while should have figured it out. I mean I claim to have had cancer when I was 9 and I also claim that I built my bedroom so how crazy is that. It's not like I was a 9 year old with cancer building an addition on my house. And it's not like I saved a bunch of crap from when I was 9 and then spread it out all over like a ****ing pig. No, I am a damn liar.

The rat thing is true though. I have all kinds of **** living in my room. One time I even had a raccoon in my room. It was ok because it gave me a BJ. OK, that was a lie, I can't help it...A raccoon didn't give me a BJ but my uncle Frank did once. Whoa...TMI I guess. Just venting. I wish I could get that outhouse to vent. I can hold my breath for up to 34 seconds but sometimes it takes longer and I end up puking blood on my lap. Anyway, Latters!
