Red Shift & Blue Shift; a single point in space

If we posit that Red Shift is evidence that the universe is expanding because "we" are witnessing Red Shift 'everywhere' w/the exception of a few galaxies demonstrating Blue Shift, then it sounds as if we are at the center of the universe. I couldn't quite understand the explanation of 'not' thinking we are the center of the universe based on our observation(s) of Red Shift.

If we and other galaxies aren't moving yet space is expanding; then how can Red Shift truly be present (viewable)? I'm not denying that Red Shift isn't present, I just can't understand it based on the idea that the space around us is expanding; not us moving. The example w/the dots on a balloon helps to a degree, I just can't understand it completely.

With regards to the universe originating from a single point in space and time or - spacetime; if there were elements (photons, electrons etc.), then they must have an origin, correct? Regardless of how small and hot they were, I cannot get my mind wrapped around non-existence.
