The term "mark up" is not a factual term. What we should focus on is profit. In the $7 bottle that sells for $30, the restaurant is making a 76% profit. This in my opinion is a bit excessive. I think it would be ok to double the price and sell it at $14, this would give the cafe a 50% profit margin on the wine.
