Posted By: GirlUWant Posted On: Jun 24, 2005 Views: 654 | RE: First Gray Squirrel - now here is a recipe you might really like: Sunshine Cake 3 cups sugar 3 cups all-purpose flour 1/2 teaspoon salt 1/4 teaspoon baking soda 1/2 cup apricot brandy 1 cup sour cream 1 cup butter, softened 6 eggs 1 teaspoon orange extract 1 teaspoon lemon extract 1 teaspoon vanilla extract Glaze: 1 1/2 cups confectioners sugar 1/2 cup apricot nectar lemon Cake: Preheat oven to 325 F. Grease and lightly flour a 10" tube pan with removable bottom. In mixing bowl, combine sugar, flour, salt, baking soda, brandy, sour cream, butter, eggs and extracts. Mix all ingredients with electric mixer, scraping sides of bowl occasionally. Pour batter into prepared pan and bake for one hour and 20 minutes to one hour and 45 minutes or until toothpick comes out clean. (man, that is a long time) Cool for 20 minutes and remove cake from pan. Cool completely with a wire rack. Glaze: Add apricot nectar to confectioners sugar 1 tablespoon at a time until you reach the desired consistency. Add a squeeze of fresh lemon juice and pour over cake. Garnish with apricots and lemon zest. I think that cake sounds really good, but I can't imagine having the oven on for almost two hours in the summer in Oklahoma! |
