One a rather unrelated note, Dragonmaster, do you work with chocolate too? I need some truffle help.

RE: All could have beat the good guy.

some guy,
The "f'ing tooth fairy" was my mom giving me change. The candy man is real. Some towns have one, one of the malls in Charleston used to have a great candy store. I closed down becouse of people taking more candy than they bought.....

BakaKage,
I'm not saying that what your seeing in the smoke is Satan. I'm just saying that they were seen live on the news. LIVE (five seconds on FOX and CNN but whatever) nobody can fake a picture that quick. Sorry, but you can't.
If your good then you can do this in a few hours or less, but if you say you can do this live then you need serious help.

merlin,
I don't think that I said that you were real, just that I'm tired of people putting down things that were never questioned untill they got old. All things old are questionable, why discredit them just for that reason.

Ops, rambling allert, sorry

What kind of truffle help? I am training in pastries. Pastries are so much better than the savory side of the kitchen. Until Laters

Dragonmaster: I don't doubt that portions of the smoke from the WTC looked like faces. Smoke is cool that way, it is constantly changing taking different shapes. A few moments after these pictures were taken, I bet there was a portion of the smoke column(s) that looked like a pirate, or a rabbit, or a hat. Ever take a Rorschach Test? You see what you want to see.

You say it is good to question things, and I don't disagree. Why don't you take your own advice and question what you "see"?

That's sweet Kris! (ha ha couldn't help myself)

Pastries are much harder to do. That is really cool you're training in that.

For some reason my filling doesn't come out right--too loose and I end up having such a hard time hardening it and then dipping it in chocolate. I used the standard heavy cream, bittersweet chocolate, corn syrup, butter deal but I don't know what went wrong. Should I just omit corn syrup or something? Thank you much!

I would try adding some cocoa powder or powdered sugar to the inside portion. It should tighten it all up a bit. You could also omit some of the corn syrup is you use powdered sugar because of the extra sugar, but hey when it comes to chocolate, sugar is all good to me. Or you could try something I tried once and I think it turned out great. Roll the truffle balls in Double Chocolate Nesquik before dipping into the chocolate. Until Laters

"Double Chocolate Nesquik "

Thats briliant. I don't think that even Chef Pat knowes about that. Your always one step above me.

One thing I like to do is make the chocolates smaller than normal frezze the centers before you put the covering on them. That way the liquid senters are a good thing. Little tiny bite size chocolates that are liquid inside, it's like the chocolate covered cherries that have the liquid inside. It's all good.

Thank you Kris and DM! I shall try both. The Nesquik coating sounds delish.
