All chocolate oringinates from the cacao (kah-KOW) tree, which can grow to 50 feet tall and thrives only in tropical regions of South America, Central America, Africa and Asia, within about 15 degrees of the equator. Like other tropical fruit trees, the cacao tree flowers dont form from it's branches, but from small cushions on it's trunk in large, ridged pods. After the pods are harvested, the cacao seeds and the white pulp surrounding them are carefully scooped out of the pods and fermented, dried and ground to make chocolate "liquor", a paste that becomes the base for all chocolate products. Know your C-Words Cacao: The tree and all it's products before they are processed. Chocolate: The processed beans of the cacao tree, can be in liquid or solid form. Cocoa: The powder that is made by removing the cacao butter from pressed cacao beans. Chocolate Liquor (or mass): A thick non-alcoholic liquid produced by grinding roasted cacao beans, or nibs. |
